The Fermentation Science Institute (FSI) supports fermentation related activities through support and administration of the fermentation science academic degree program, the operation of the FSI Service Laboratory, support of the Illinois Food, Entrepreneurship, Research and Manufacturing (iFERM) Hub of the Illinois Innovation Network, support of fermentation related research, and outreach to fermentation related businesses and economic development.
The mission of the FSI is to support the students and faculty of Southern Illinois University Carbondale to advance knowledge in the associated areas of fermentation science and to transfer this knowledge through our educational programs, research activities and outreach to the region and fermentation related industries, which includes the production and analysis of alcoholic beverages, fermented foods and cheese, and industrial fermentation (energy, materials and pharmaceutical).
