Picky Eating During Childhood and the Role of Sensory Factors in Food Acceptance

Picky eating is a relatively common problem during childhood and is of considerable concern given its negative health consequences. My Honors Thesis will investigate how sensory attributes, specifically taste, texture, and color, contribute to vegetable acceptance in picky eaters. This research has important implications for the development of interventions to encourage children's consumption of healthy foods.
